This rice lager has been made using steamed rice inoculated with yellow Koji spores that is then dried and dehydrated by Simon at Koji Copenhagen. Traditional ingredients create a robust foundation in the brewhouse and fermentation; a small dry hopping creates some modern flare. Dry hopped with more Amarillo and a touch of Nectaron to amplify the citrus and umami qualities of the base beer.
